Canadian Chinook Hop Profile
Origin:
- Grown in Canada, derived from the original US Chinook (itself released by USDA in 1985 from a cross of Petham Golding and wild American males)
- Canadian terroir can produce some unique aroma and flavor nuances compared to US-grown Chinook
Type:
- Dual-purpose (great for both bittering and late/aroma)
Typical Alpha Acids:
- 12–15%
Beta Acids:
- 3–4.5%
Aroma & Flavor Notes:
- Pine: Big, bold pine resin (signature Chinook character)
- Grapefruit: Punchy grapefruit zest and citrus peel
- Spice: Subtle black pepper, herbs, and light earthiness
- Tropical Fruit: Mellow pineapple or mango, especially in late/dry hop (can be more pronounced in Canadian-grown)
- Other: Sometimes softer, greener, and less harsh than US-grown Chinook, with a brighter fruit character and milder dankness
Brewing Characteristics:
- Excellent all-rounder for bittering, flavor, and aroma
- Canadian Chinook leans toward a balanced and slightly fruitier profile compared to US Chinook (often described as “punchy, yet smooth”)
- Works wonderfully in both classic and modern beer styles; excels in late hopping and dry hopping due to high oil content
Best Beer Styles:
- IPA, American Pale Ale
- Hoppy Amber, Brown Ale
- Porter, Stout
- Lager (for a piney/citrus twist)
- Farmhouse/Saison
Substitutes:
- US Chinook (very close, but may be slightly more resinous/harsh)
- Columbus/CTZ (for pine/dank, less citrus/fruit)
- Simcoe (similar pine, but with berry and more fruit)
Fun Fact:
Canadian Chinook has been winning favor with craft brewers for its harmonious blend of pine punch and citrus brightness—sometimes seen as more “approachable” than its US sibling, especially in highly aromatic American-style ales.
