Brewing Characteristics:
- Known for its clean, refreshingly crisp bitterness and bright, floral-citrus aroma
- Works beautifully as a single hop or in blends—late- and dry-hopping accentuates lime and floral notes
- Great for providing balance—never too bold or one-dimensional
Best Beer Styles:
- Pilsner (especially NZ Pilsner) and lighter lagers
- Pale Ale, Blonde Ale
- Wheat beers and Kölsch
- Saison, Golden Ale
- Fruity, floral IPAs when used as a secondary hop
Substitutes:
- Motueka (also NZ lime/fresh citrus, but more intense herbals)
- Hallertau Mittelfrüh (milder, more floral/herbal, less lime)
- Saaz (for floral and gentle spice, but less citrus/lime)
Fun Fact:
Wakatu is the Māori name for the Nelson region of New Zealand, and the hop is celebrated for being a fantastic “bridge” between traditional German and zestier Kiwi flavors!
