AU Ella Hop Profile
Origin:
- Australia
- Bred by Hop Products Australia (HPA), released commercially as "Stella" in 2011 and later renamed "Ella" to avoid confusion with Stella Artois
Type:
- Dual-purpose (very versatile: excellent for both bittering and as a late/aroma hop)
Typical Alpha Acids:
- 13–16%
Beta Acids:
- 4.5–7%
Aroma & Flavor Notes:
- Floral: Distinct, vibrant floral and soft anise (especially at lower hopping rates)
- Spice: Black pepper, star anise, and subtle herbal notes
- Tropical Fruit: Lychee, melon, passionfruit, and sometimes stone fruit
- Citrus: Grapefruit, lemon, and a touch of orange zest
- Other: At high hopping rates, the fruitiness comes forward; in lower rates, more floral/spicy character is expressed
Brewing Characteristics:
- Famous for being dynamic:
- Low doses = elegant floral and noble spice
- High/late/dry hop doses = powerful tropical and citrus fruit
- Performs well in lagers, pale ales, IPAs, and saisons—any style that benefits from both complexity and a touch of the exotic
Best Beer Styles:
- IPL, Pilsner, Hoppy Lager
- IPA, Hazy IPA, Pale Ale
- Saison, Belgian Blonde
- Summer Ale, Wheat Beer
Substitutes:
- AU Galaxy (for tropical/citrus, but with bolder passionfruit)
- Vic Secret (more piney/tropical)
- Motueka or Nelson Sauvin (for fruitiness but with different profiles)
Fun Fact:
Ella is sometimes described as “the little sister to Galaxy”—offering a refined spicy/floral base and fruity punch at higher hopping, making it super flexible for creativity in the brewhouse.
