  • Released by Washington State University in 2013
  • Developed from a cross between Cascade and a wild hop
Type:
  • Dual-purpose (suitable for both bittering and especially prized for its complex aroma and flavor)
Typical Alpha Acids:
  • 7.7–9.1%
Beta Acids:
  • 3.3–7.1%
Aroma & Flavor Notes:
  • Lemon/Lime: Bright lemon zest, lime, and lemon peel
  • Melon: Honeydew, cantaloupe, and hints of watermelon
  • Tropical Fruit: Mango, pineapple, and subtle coconut
  • Herbal: Soft herbal complexity, hints of mint and lemongrass
  • Other: Touch of “candy” sweetness and sometimes mild stonefruit (peach, apricot)
Brewing Characteristics:
  • Praised for its smooth, mellow bitterness and big “juicy” aroma
  • Features a unique blend of citrus, melon, and tropical fruit—making it perfect for late additions and dry hopping
  • Adds a modern, fruit-forward character to pale ales, IPAs, and lagers
Best Beer Styles:
  • Pale Ale, IPA (especially hazy/juicy)

Fun Fact:
Cashmere gets its soft, “pillowy” mouthfeel and plush tropical/citrus aroma from its Cascade parentage, but adds a distinctive melon and coconut note unique to the variety.
