Aroma & Flavor Notes:
  • Pine: Assertive and classic pine resin—one of Simcoe’s most famous traits
  • Citrus: Grapefruit, tangerine, and lime zest
  • Tropical Fruit: Passionfruit, apricot, papaya, subtle mango
  • Berry: Sometimes black currant or raspberry in certain harvests
  • Herbal: Earthy and woodsy undertones, hints of mint or dill
  • Other: Slight onion and catty aromas at higher intensities in some lots
Brewing Characteristics:
  • Hugely popular for its versatility—provides potent bittering but really shines in late additions and dry hops, making beers juicy, flavorful, and aromatic
  • Key contributor to the “classic West Coast IPA” profile, blending pine with high-intensity fruitiness
  • Excels as a single-hop showcase or blended with Mosaic, Citra, Cascade, Centennial, etc.
